Prepare the ingredients. The scallion pancake is salty, so I paired it with two kinds of salty fillings: crab roe and egg yolk lava for the glutinous rice balls.
Take out the glutinous rice balls in advance and let them thaw for 3-5 minutes. They do not need to be completely thawed.
The scallion pancake also needs to be thawed for 3-5 minutes.
After the scallion pancake has thawed slightly, cut it into 4 small pieces by making a cross cut.
Wear gloves and place a glutinous rice ball on a piece of scallion pancake.
Wrap the glutinous rice ball with the scallion pancake, pinch the opening tightly downwards, and then shape it into a smooth ball.
After wrapping all the glutinous rice balls, place them in the frying basket of the air fryer.
Separate the egg yolk and use only the yolk.
Brush an appropriate amount of egg yolk liquid on the glutinous rice balls with a small brush.
