Detailed Steps for Making Sugar Sandwich Cookies
Pour granulated sugar into vegetable oil and mix well.
Add lotus root powder and mix well.
Add eggs gradually and beat until light and fluffy.
Add desiccated coconut and mix well until a thin batter forms.
Sift in the flour.
Knead into a soft dough, adjust the amount of flour based on the water absorption of the flour, the dough should be soft and equivalent to the red bean paste filling.
Let the dough rest for 15 minutes, roll it out into a 3-4mm rectangle (if the dough is too soft, fold it three times), spread red bean paste filling on half, leaving some blank space on the edges.
Fold the dough in half and pinch tightly.
Roll out to about 3mm thickness.
Sprinkle a layer of sugar on the surface, press lightly with hands or a rolling pin.
Use a mold to cut out shapes, place on a baking sheet, if too soft, use a scraper to assist in moving (gather the remaining dough together and press again, the appearance may not be perfect, but the taste remains the same).
Decorate with goji berries (you can make indentations first, then decorate after baking, as goji berries easily burn, make small holes on the surface to prevent puffing), place in a preheated 160-degree oven, bake on the middle rack for about 20 minutes until firm and the bottom turns golden.
