Detailed Steps for Cooking Sweet and Happy Date-Almond Cake for a Happier Life
1. Soak the red dates in boiling water for 5 minutes.
2. Remove the pits from the red dates and cut them into small pieces. Add honey and brown sugar and blend them into a paste using a food processor.
3. Soak the almonds in boiling water, remove the skin, and heat them in the microwave for 1 minute. Then add cornstarch and blend them into almond powder using a food processor.
4. Separate the egg whites and yolks. Add vanilla powder to the egg yolks and gradually add 20g of sugar, beating until the egg yolk mixture turns white.
5. Sift the low-gluten flour and almond powder separately and mix them with the egg yolk mixture. Leave the un-sifted almond pieces aside for later use.
6. Add lemon juice to the egg whites and gradually add 25g of sugar, beating until the egg whites form stiff peaks.
7. Beat the egg whites until they form stiff peaks, meaning that the bowl can be inverted without the egg whites falling out.
8. Add the egg whites to the egg yolk mixture and quickly fold them together. First, add 1/3 of the beaten egg whites to the egg yolk mixture.
9. Then add the remaining egg whites to the egg yolk mixture and fold them together evenly. Use a cutting motion instead of stirring in circles. Do not mix for too long, as this may cause the egg whites to lose their foam and affect the softness of the cake.
10. Preheat the oven to 120 degrees Celsius. Pour the cake batter into the baking mold while the oven is preheating. Brush a little oil on the sides of the mold, add half of the cake batter, then add the date paste.
11. Add the remaining cake batter on top, filling the mold to about 80% full. Finally, sprinkle the unsifted almond pieces on top and put the cake in the oven.
12. Bake the cake in the oven for 10 minutes. Adjust the baking time according to your oven as each oven is different.
13. In less than 5 minutes, the aroma of the cake will fill the air as it rises. I couldn’t wait to taste a piece as soon as it was done. The almond flavor combined with the sweet date paste was pure happiness.
