Detailed Steps for Cooking Sweet and Sour Chinese Cabbage
Half a Chinese cabbage, four to five dried red chilies (for decoration), three slices of ginger.
The Chinese cabbage should have a good texture, do not cut it, break it into pieces with your hands.
Blanch in boiling water (the key to blanching is to bring the water to a boil on high heat, quickly add the cabbage, stir quickly while pouring in one-third tablespoon of white vinegar, once it softens, immediately remove and cool in cold water.
Cut the dried red chilies into segments, finely chop the ginger, stir-fry the dried red chilies and ginger over low heat until fragrant.
