Detailed Steps for Cooking Sweet and Sour Duck Neck
Rinse the duck neck and drain the water in a bowl.
Add 150ml of water, sliced ginger, and duck neck into a pressure cooker, mix well, and steam over water for 15 minutes. (If you want the duck neck to have a five-spice or spicy flavor, you can add dried chili or star anise during steaming.)
Use chopsticks to remove the duck neck and place it on a plate.
Remove the ginger, reserve the sauce, and set aside.
Heat the pan, add 50ml of oil, heat until 70% hot, add the duck neck and stir-fry until slightly yellow, then remove.
Leave some oil in the pan, add 50g of sugar, dissolve until it turns bronze, pour the sugar syrup over the duck neck to coat it.
Add the reserved steaming sauce, cook for 8 minutes, then add 30ml of vinegar and continue cooking.
Once the sauce thickens, drizzle a few drops of sesame oil and the dish is ready to serve.
