Detailed steps for cooking Sweet and Sour Flavor – Pineapple Gulu Pork
Use half a pound of fatty or lean pork (be sure to remove the skin, which can easily splatter when frying). Cut the lean part into large cubes and the fatty part into small cubes.
Add an egg, scallion, salt, light soy sauce, cornstarch, baking soda, and sugar to the meat mixture.
Mix well and let it marinate for a while. No need to refrigerate if cooking within half a day.
Cut the pineapple into small pieces and soak them in salt water.
For the thickening sauce, mix 2 tablespoons of cornstarch, a little light soy sauce, a few drops of dark soy sauce, a few drops of sesame oil, 1 tablespoon of strawberry sauce (or tomato sauce), 1 tablespoon of white sugar, and a little water together.
Remove the seeds from the red chili pepper and cut it into your preferred shape (green chili pepper is also a good addition).
Use about 50g of flour and 30g of glutinous rice flour (adding glutinous rice flour makes it more crispy). Mix the meat in the flour mixture and add a little water if it is too dry.
Heat up the oil in a pan and turn off the heat when it is hot. Use a spoon to scoop the batter into the pan in any size you prefer. After all the batter is in the pan, turn up the heat and fry the meat. Remember to keep stirring with chopsticks.
When it turns slightly yellow, turn off the heat and let it fry with the residual heat. When it cools down a bit, turn on low heat until it is fully cooked.
Remove the fried meat from the pan and set it aside.
Heat up the thickening sauce in the pan until it thickens.
Drain the water from the pineapple, add the chili pepper, meat, and thickening sauce to the pan, and stir well. (This type of chili pepper can be eaten raw and is very crispy.)
Place the Gulu pork on the pineapple and it’s ready to serve. It’s sweet and sour, and tastes great!
