Detailed steps for cooking Sweet and Sour Sea Bass
Wash the sea bass and make some shallow cuts on its body. Add cooking wine, ginger shreds, and salt to the fish, and marinate for an hour.
Prepare these two sauces, tomato sauce and Thai sweet and spicy sauce.
Put a small spoonful of sugar in a bowl.
Add two spoonfuls of tomato sauce and two spoonfuls of Thai sweet and spicy sauce. The ratio of tomato sauce and Thai sweet and spicy sauce to sugar is 2:2:1. Mix them all in a bowl.
Add a little salt and a spoonful of white vinegar, and then add some water to mix them well.
Use a damp paper towel to dry the fish.
Pat some dry starch on the fish, shake off the excess starch, and leave only a thin layer.
Heat up the oil in the pan and fry the sea bass. Use a spoon to continuously pour the oil onto the fish, including the head and tail.

Pour the sauce over the fish, sprinkle with pine nuts, and serve. If you don’t have pine nuts, you can skip them!
