Blanching: Place the ribs in a pot of cold water, bring to a boil, and remove any scum.
Remove the blanched ribs, rinse with water to clean.
Place the cleaned ribs in a pot, add water.
Add ginger slices, scallion, white wine, star anise, Sichuan peppercorns, cinnamon, and simmer for 1 hour.
After 1 hour, transfer the ribs to a frying pan, pour the rib broth into the pan, add the sweet and sour sauce ingredients (sugar, vinegar, soy sauce, oyster sauce, salt, five-spice powder).
Simmer for 20 minutes to reduce the sauce. Before serving, add a teaspoon of vinegar (as vinegar evaporates during heating, adding a spoon before serving retains the sweet and sour flavor).
