Detailed Steps for Cooking Sweet and Sour Spare Ribs
Rinse the spare ribs and drain.
Add salt, cooking wine, and cornstarch to the spare ribs, mix well, and marinate for 15 minutes.
Heat oil in a pan to 70% hot, add the marinated spare ribs one by one for deep-frying until slightly golden, then remove and drain excess oil.
Deep-fry again until golden brown, then remove.
In a bowl, mix cooking wine, light soy sauce, dark soy sauce, ketchup, sugar, vinegar, and water to make the sauce.
Pour the spare ribs and sauce into the pan, bring to a boil over high heat, then simmer over low heat for 15 minutes, and finally turn up the heat to reduce the sauce.
