Detailed Steps for Making Teriyaki Char Siu
Spread the meat strips out and make small holes all over with an ice pick or fork for better flavor absorption;
Place the meat in a large bowl, add 3 tablespoons of Japanese teriyaki sauce, 2 tablespoons of light soy sauce, 1 teaspoon of Sichuan peppercorn powder, 1/4 cup of vodka, and 1 tablespoon of honey, mix well with hands;
Marinate the meat in a sealed container in the refrigerator for 2-3 days;
Arrange the meat strips flat in a glass baking dish;
Wrap the surface with aluminum foil, then place in a preheated oven at 450F for about 30 minutes;
While the meat is in the oven, prepare a sauce to brush on the surface later, mix 2 tablespoons of teriyaki sauce, 1 tablespoon of light soy sauce, and 2 tablespoons of honey in a bowl;
When the meat is done, pour the juices into another bowl, clean the baking dish, line it with the clean side of the foil that was covering it, place a metal rack on top, like a steaming rack, place the meat on top, brush with the sauce, and broil on low for about 10 minutes to brown the meat and caramelize the surface;
Let the meat cool slightly after baking, when it’s cool enough to touch, clean the cutting board, slice the char siu into thin pieces, ready to serve, or can be used for grilling green beans, snow peas, etc.
