Prepare all the ingredients.
Remove bones from chicken thigh and cut into pieces, marinate with mirin, sake, and soy sauce for 30 minutes.
Slice onion into strips, cut Napa cabbage into pieces.
Boil noodles until 80% cooked, then drain and rinse with cold water, set aside.
Heat a little oil in a pan, stir-fry Napa cabbage and onion until softened, add some salt and black pepper, then set aside.
