Soak the pork bones in water for 30 minutes, changing the water 2-3 times in between.
Peel and dice the tomatoes, slice the lemons, rinse the lemongrass and place it in a marinade box, wash and chop the cilantro.
Remove the shrimp veins, trim the shrimp tails and legs.
Rinse the clams to remove sand, clean and cut the squid into flower-like patterns; blanch in boiling water.
Remove and immediately cool in ice water for later use.
Heat a little oil in a pot, sauté the onions and chili rings until fragrant.
Drain the pork bones, add to the pot and stir-fry briefly.
Add enough water, add lemons, tomatoes, lemongrass, and simmer over low heat for 60 minutes.
