Main Ingredients:
2 pounds of boneless chicken feet; 2 cucumbers.

2 lemons; 4 kaffir limes; some cilantro; 5 garlic cloves; some scallions; a piece of ginger; 40g bird’s eye chilies (or Thai chilies); some lemongrass; some shallots (can be replaced with onions).

280g Thai sweet and spicy sauce; 120g premium soy sauce; 10g sugar; 20g each of rice vinegar and white vinegar; 10g fish sauce (optional).

Thai-style Spicy and Sour Boneless Chicken Feet Cooking Steps
Split the boneless chicken feet in half. Add scallions, ginger, cooking wine, and Sichuan peppercorns to boiling water and blanch the chicken feet for 8-10 minutes to remove any unpleasant smell.
Mince the ginger and garlic, and dice the bird’s eye chilies. Slice half of one lemon and juice the other half. Cut the lemongrass into diagonal pieces and the cilantro into sections. Cut the cucumbers into sections.
Immediately put the blanched chicken feet into ice water and let them cool for 10 minutes.
Set aside a bowl of chicken broth.
Put all the cut ingredients into a mixing bowl.
Add the chicken feet, cucumbers, and cilantro to the mixing bowl. Squeeze in the lemon juice. Pour in the soy sauce, sugar, rice vinegar, white vinegar, and sweet and spicy sauce.
Wear disposable gloves and mix everything together. Adjust the seasoning to taste.
