Steps for Cooking Thai Sweet and Spicy Fish
Cut the fish into thin slices, sprinkle with salt and pepper, and marinate for ten minutes.
Cut ginger into thin strips and slice garlic.
Coat the fish with starch and fry in oil until slightly golden brown.
Remove the fried fish from the oil.
Discard the oil and stir-fry ginger and garlic in the pan.
Add the Thai sweet and spicy sauce, about half a bowl. Add one tablespoon of tomato sauce and one teaspoon of sugar to balance the flavor. Stir-fry until evenly mixed.
Add a bowl of water and bring to a boil. Add the fish and use a spoon to pour the soup over the fish. Cook over low heat for one minute, turn the fish over, and cook for another minute. Remove the fish from the pan.
Place the fish on a plate.
Boil the sauce in the pan over high heat, taste it, and add salt and chicken broth. Cook until the sauce becomes thick and sticky, and pour it over the fish.
