Steps to Make Thousand-Layer Red Date Cake
Wash and slice the red dates, boil them in 800g of water for 15 minutes, then add 200g of granulated sugar and boil for another 5 minutes until the sugar dissolves.
Put 250g of water chestnut flour in a large container, and mix it with 500g of water. I used a large soup pot here.
Mash the boiled red dates and filter out the water while it’s still hot. Add the hot red date water to the water chestnut flour mixture that was prepared earlier, and stir clockwise while adding it in small amounts multiple times until it’s evenly mixed.
Boil water in a steamer, and put the container for steaming the red date cake in it. I used a baking pan. Steam until the pan is hot, then add the mixed water chestnut flour water. Be sure to stir constantly, or the water chestnut flour will sink to the bottom. Add the mixture to the pan in small amounts, using a ladle. Cover the pan and steam for 3-5 minutes until it’s transparent.
Repeat the process until the last layer is done, then steam for another 10 minutes before removing from the steamer. If the cake is not transparent, steam it until it is.
