Ingredients: 75g low-gluten flour, 42g butter, 35g fine sugar, 15g egg, 2g cocoa powder, 1g instant coffee powder, 1/2 tsp egg liquid, 1/4 tsp water
Soften the butter, add fine sugar, and beat until fluffy.
Add the egg in two batches, and mix well.
Sift in the low-gluten flour,
and mix into a smooth batter.
Divide into three equal parts.
Add cocoa powder to the egg liquid, mix well,
pour into one portion of the dough,
and mix into a uniform cocoa dough.
Dissolve the coffee powder in water,
pour into another portion of the original dough,
and mix into a coffee dough.
Roll the coffee dough into a square sheet.
Roll the cocoa dough into an equally sized square.
Layer the light coffee dough on top of the dark cocoa dough.
Roll out the plain dough into the same size,
place it on top of the light coffee dough, and press lightly.
Carefully roll it up,
into a cylinder, chill in the refrigerator until firm.
Remove, slice into pieces about 7mm thick,
arrange on a baking sheet,
place in the oven, middle rack, 180 degrees Celsius, bake for about 15 minutes.
