Steps to Make Tiger Stripe Cake
Cake batter ingredients: Cake flour 75g, vanilla powder 2g, 3 eggs, 50g oil, 37g milk, 16g+55g sugar, a pinch of salt, a few drops of white vinegar.
Tiger stripe ingredients: 4 egg yolks, 16g cornstarch, 30g powdered sugar (I reduced by 5g).
Mix milk with 16g sugar.
Add oil and mix well.
Add egg yolks one by one, mix well, (preheat oven to 200 degrees).
Sift in flour, fold to make egg yolk batter.
7-10: Process of beating egg whites, gradually add salt, white vinegar, and 55g sugar, beat until stiff peaks form.
Mix well the egg yolk batter until thick.
Combine with beaten egg whites, fold gently, (preheat oven to 200 degrees).
Add beaten egg whites to the egg yolk batter in three portions.
Gently fold from bottom up.
Pour into a greased and lined baking pan, remove large air bubbles.
Place in the middle rack, bake at 200 degrees for 10 minutes, then at 160 degrees for 10 minutes (original recipe was 23 minutes, I checked with a toothpick, it was done, adjust according to your oven).
Once baked, invert the cake and peel off the parchment paper (seems unevenly baked).

Spread jam evenly on the narrow end, roll up.
Roll up (originally planned to use thick blueberry sauce, but the cake was sweet enough, so I used a thin layer of osmanthus sugar).
Mix tiger stripe ingredients.
Whisk until the mixture rises, changes color, and becomes white (if too thick, add a little milk, as long as it’s mixed well, the volume increase is not crucial, won’t affect the taste) (preheat oven to 220 degrees).
Pour the beaten mixture evenly into the baking pan (I used the back side of the parchment paper from the cake just baked, being thrifty is a virtue).
Place on the top rack of the oven, broil for 2-3 minutes, keep a close eye, in less than 2 minutes, the edges started to burn.
Invert and peel off the parchment paper (spray some water on the paper to make it easier to peel), spread jam (I used honey).
Place the cake on top, roll up, and it’s done.
