Let’s start with making the ladyfingers. Gradually add sugar to egg whites and beat until stiff peaks form.
Add sugar to egg yolks and mix well.
Mix well with a whisk.
Gradually fold the beaten egg whites into the egg yolk mixture.
Add sifted cake flour and fold gently with a spatula. The batter will not deflate this way.
Pipe onto a baking sheet and bake at 190°C for 10 minutes.
