Steps to Make Tofu Sausage Bread
2. Deflate the fermented dough, divide it into 12 equal parts, and shape them into rounds. Cover with a damp clean cloth or plastic wrap, and let it rest for about 15 minutes.
3. Take one portion, roll it into a round shape with even thickness (about 1 cm thick), and place it on a baking tray. After all are done, let them undergo a second fermentation in a warm and humid place for about 40 minutes.
4. After the second fermentation, preheat the oven to 180°C. Brush the dough with egg whites, gently press sausage slices onto the bread, sprinkle chopped green onions and dried rosemary in the gaps, and finally sprinkle a layer of mozzarella cheese on top.
5. Place the bread on the middle rack of the oven and bake for about 20 minutes. It’s even better to squeeze a little tomato sauce or mayonnaise on top when eating!
