Steps for Cooking Tomato and Eggplant Stir Fry
Prepare the ingredients and wash them thoroughly.
Roast the tomatoes over an open flame until the skin peels off easily.
Peel the skin off the eggplant and tomatoes carefully. Cut the tomatoes into small pieces. Slice the garlic and cut the onion into small pieces.
Cut the eggplant into thin strips.
Heat some oil in a pan. Add the garlic and onion and stir fry until fragrant.
Add the tomatoes and stir fry until they become mushy.
Add the eggplant and stir fry for a while. Add some thirteen spices and continue to stir fry for a minute.
Add some water to the pan and cover it. Simmer for ten minutes on low heat.
Remove the lid and turn up the heat to evaporate the remaining water.
