Tomato Beef and Enoki Mushroom Soup: Detailed Cooking Steps
Prepare tomato, enoki mushroom, beef, scallion, and garlic.
Boil water in a pot with a slice of ginger (or add cooking wine) to remove the fishy smell. Blanch the beef and rinse with cold water.
Heat the wok and add oil. Stir-fry the garlic and scallion until fragrant.
Add the tomato and stir-fry until soft and mushy.
Add enough water (more if you prefer more soup) and cover the wok. Cook for 1-2 minutes to bring out the flavor of the tomato.
Uncover the wok and add tomato sauce, oyster sauce, pepper, and salt. Add enoki mushroom and cook for about 1 minute (adding tomato sauce makes the soup more flavorful and sour).
