Tomato Beef Oatmeal Bun Cooking Steps
Add water, milk powder, sugar, salt, and egg into the bread bucket. I used small eggs, with each egg weighing 40 grams.
Add flour and yeast.
Knead the dough for about 15 minutes, then add softened butter.
Knead the dough until it reaches the expansion stage.
You should be able to stretch a thin, elastic film from the dough.
Cover the bucket with a damp cloth and let it ferment until it doubles or triples in size.
Divide the fermented dough into 4 pieces, cover with plastic wrap, and let it rest for 15 minutes to release air. I made more dough, so I ended up pan-frying 2 buns. The recipe yields 4 buns.
Roll out the rested dough into a circle, then flatten it and place it in a baking pan.
I placed it in the oven, added water for moisture, and let it ferment at 38 degrees Celsius until it doubles in size. Sprinkle a little cornmeal on the surface to prevent sticking (note: it’s cornmeal, not cornstarch).
Preheat the oven to 180 degrees Celsius, place an oiled cloth on the baking pan, then cover with another baking pan. Bake in the oven for 16 minutes.
Once baked, let the oatmeal buns cool and store them in a plastic bag to prevent drying out. I baked them the night before and used them the next morning.
In the morning, prepare the beef by squeezing tomato juice from a ripe tomato.
Slice the beef, add tomato juice, soy sauce, salt, mix well by hand, let the beef absorb the tomato juice completely, then add a little cornstarch, mix evenly, and finally add a little oil, marinate for 10 minutes. This treatment ensures the beef is flavorful, tender, and juicy when cooked, and not tough.
Heat a pan, add oil, and stir-fry the marinated beef over high heat until cooked, for a short time to avoid overcooking and toughness.
Once cooked, split the oatmeal buns in half, top with perilla leaves or lettuce leaves, or any greens you prefer.
Top with the cooked beef and enjoy.
