Soften gelatin with syrup, melt milk and butter over hot water, keep above 40 degrees.
Sift low-gluten flour and set aside, beat whole eggs in a bowl, add all sugar, mix until smooth.
Slowly stir over hot water until around 40 degrees, then remove from heat.
Whisk at high speed, lift and drip back into the batter to form a figure “8”.
Sift in low-gluten flour at once, fold 30-40 times until well mixed.
Then beat at low speed for 2-3 minutes, keeping the mixer still, turning the bowl to incorporate large bubbles and make the batter smoother.
Pour the milk-butter mixture onto a spatula, fold evenly.
Pour into prepared mold, tap gently to remove air bubbles, place in preheated 160-degree oven on lower rack, bake for 35 minutes, then gently tap the cake again, invert onto a wire rack for 5-6 minutes before flipping to cool.
After cooling, remove from mold and slice into 3 layers with a cake slicer.
Whip whipping cream until soft peaks form.
Pre-filter mixed fruits in sugar water.
Spread cream on each layer, then use fingers to squeeze a circle of cookies around the edge to create a unified height for the cake.
Top with mixed fruits.
Repeat the process until placing the final cake layer on top.
Evenly spread and smooth the surface.
Whip remaining cream with a little pink cream until stiff peaks form.
Using a small rose piping tip, squeeze out the skirt shape with the small end facing down and the large end facing up.
Then on the top of the cake, use a cookie piping tip to create rose flowers.
Finally, sprinkle some red yeast powder or strawberry powder on the surface, and the cake is complete.
