Detailed Steps for Cooking Tomato Sauce Braised Fried Pork
Cut the pork into large pieces and marinate with thirteen spices, soy sauce, sugar, sesame oil, and cornstarch for at least half an hour.
Heat a generous amount of vegetable oil in a pan and fry the marinated pork over medium heat. (The oil does not need to completely cover the pork)
Flip the pork over to fry the other side once one side turns golden brown.
Fry both sides until golden brown, then remove from the pan and set aside.
Leave a small amount of oil in the pan, heat it up, then add ginger and garlic.
Once the ginger and garlic are fragrant, pour in half a cup of tomato sauce.
Add two tablespoons of sugar, a little water, ground pepper, and chicken essence. Cook until thickened, then pour over the fried pork before serving.
