One pork trotter, ginger, broad beans
Cut the pork trotter into pieces (it’s quite a challenge for a weak woman)
Put broad beans, ginger, and the cut pork trotter into a pressure cooker and cook for 30 minutes. (Had a sudden craving, otherwise the beans can be soaked first)
Set aside the cooked trotter. Smells so good.
Chop the spring onion, garlic, and chili and set aside.
Heat oil in a pan, use less oil, stir-fry the chili first.
After stir-frying the chili for a while, add the garlic and stir-fry until fragrant.
Once the garlic and chili are fragrant, add the cooked pork trotter and stir-fry for 1 minute. Add a little light soy sauce, sprinkle with spring onion, and it’s ready to serve… so delicious, haha.
