Detailed Steps for Making Red Yeast Cranberry Bread
Soak the dried cranberries in cold water for 30 minutes, then drain and set aside.
Place all ingredients except butter and cranberries into the bread machine.
Start the 15imix program and knead the dough for 20 minutes.
Add the butter and start the 15imix program again, kneading the dough for another 20 minutes.
The dough becomes smoother after two rounds of kneading.
You can basically pull out a glove film from the dough.
Knead the dough into a round shape, put it back into the bread machine, and choose program 20 for the first fermentation, which takes 2 hours.
This is the dough after the first fermentation.
Take out the dough and release the air. Remove the mixing blade as well.
Place the drained cranberries on the rolled-out dough.
Roll up the dough and place it in the bread machine bucket.
Choose the yogurt program for the second fermentation, and ferment until it is about 70% full, as shown in the picture.
Then start program 26 for baking, which takes 55 minutes.
After baking, pour out the bread, let it cool, and slice it.
