Detailed Steps for Making the “Rice Egg Cake”
2 eggs (with shells 128g), 80g milk, 20g salad oil, 90g rice flour, 50g fine sugar, shredded green and red vegetables as needed, 3g white vinegar
Separate egg yolks and egg whites completely into two stainless steel bowls.
Beat egg yolks until pale, then add 10g fine sugar and mix well.
Add 20g salad oil and mix well.
Add 80g milk and mix well.
Sift rice flour into the egg yolk mixture, fold or cut to make it uniform without lumps (set aside).
Beat egg whites until coarse foam, then add 20g fine sugar and beat until stiff peaks.
For the stiff peaks egg whites, add 20g fine sugar for the second time, then add 3g white vinegar and continue beating.
Stop beating when the egg whites form soft peaks in the bowl.
Take 1/3 of the egg white mixture and fold it into the egg yolk mixture gently until well combined.
Repeat with another 1/3 of the egg white mixture and fold until well combined.
Finally, pour the mixed egg yolk mixture into the egg white mixture and fold gently until just combined (do not overmix).
Pour the evenly mixed rice egg cake batter into a pre-greased (lightly greased with salad oil) container, gently shake the container a few times to remove air bubbles.
Sprinkle chopped green and red vegetables (if unavailable, you can use raisins, goji berries, or hawthorn cakes as substitutes) evenly on top of the rice egg cake batter.
Place the container in a preheated steamer, steam over medium heat for 15 minutes, then let it sit for 5 minutes before uncovering and cooling.

The steamed and cooled rice egg cake is as white as jade, adorned with green and red vegetables, presenting a nice appearance, isn’t it?
