Detailed steps for cooking Vegan European Walnut Buns
Mash bananas and mix with sifted high-gluten flour, sifted powdered sugar, and sifted cinnamon powder (do not add water yet).
For health reasons, add a spoonful of bran.
Add soy milk, yeast, and extra virgin olive oil to the mixture.
Knead the dough with a mixer (or by hand).
Let it ferment until it doubles in size and becomes very elastic (see red circle).
Take it out and divide it into equal portions, then let it relax for 20 minutes.
Roll the dough into a thick sheet and place walnuts on it. You can put as many as you like, but make sure there is space between the walnuts.
Roll it up to one side.
After rolling it up, pinch the back and sides tightly. Don’t worry if it doesn’t look pretty, it will be very flat after fermentation.
Let it ferment until it doubles in size.
Preheat the oven to 180℃, then bake for 20 minutes.
