Dice the onion
Peel and dice the zucchini; heat olive oil in a pan, add zucchini, and stir-fry with a little salt until soft
Transfer the zucchini, cooked to 80% tenderness, into a baking dish
Heat olive oil in a pan, sauté the diced onion until slightly golden (you can also use minced garlic)
Add 250ml of tomato juice and bring to a boil
Add 1 tsp of Provence spice
Add 1/2 tsp of basil, 1/2 tsp of parsley, a pinch of salt, and black pepper
Simmer over medium-low heat for 5-8 minutes, stirring with a wooden spatula until the sauce thickens
Pour the cooked tomato sauce over the zucchini
Sprinkle with shredded cheese
Preheat the oven to 200°C, bake for about 10-15 minutes
