Steps to Make Vodka Cranberry Ice Cream
Ingredients: Vodka 100ml, Cranberries 80G, Egg yolks 5, Sugar 80G, Heavy cream 300G, Milk 250G
Chop the cranberries slightly and soak them in vodka for about half an hour.
Boil milk with half of the sugar.
Whisk the egg yolks slightly.
Pour the milk into the slightly whisked egg yolk mixture along the edge of the bowl and stir.
Continue to stir the egg yolk mixture while pouring in the milk.
Pour the egg yolk mixture into a pot and heat it over low heat. Keep stirring until the milk and egg yolk mixture thickens and then remove from heat. Cool it down in a cold water bath.
Whip the heavy cream and sugar until it reaches 6-7 times the original volume. Drain the cranberries and reserve the vodka.
Mix half of the whipped cream and egg yolk mixture with half of the cranberries.
Add the remaining heavy cream and cranberries, and pour in the vodka that was used to soak the cranberries. Mix well.
Put it in the refrigerator and stir it every hour for a total of four times.
