Detailed Steps for Cooking Vodka Steak
Buy fresh packaged steak from the supermarket on the same day. If it is frozen, let it thaw naturally. Do not use a microwave or put it in water to defrost, as this will affect the texture of the meat.
Prepare vodka, onion, potatoes, and other corresponding vegetables. Red wine is a great accompaniment to steak. Boil the potatoes and vegetables in advance.
Heat a frying pan over high heat, add a small amount of olive oil, and when the oil starts to smoke, add the steak. Use a spatula to continuously drag and turn the steak for about 30 seconds, then flip it and continue dragging and turning with the spatula, occasionally pressing the steak with the spatula. This will make the steak cook faster and the elasticity of the steak can indicate its doneness. This is the key experience for pan-frying steak. (If the meat feels less elastic when pressed, it is overcooked. Conversely, the more elastic it is, the less cooked it is inside.)
Heat the pan again, add olive oil, and when the oil is hot, add onion rings to stir-fry (you can use butter if you prefer). Add a small amount of soy sauce and stir-fry, then pour it over the steak.
Sprinkle with crushed black pepper and squeeze lemon juice on top.
I like it to be 80% cooked, with a slightly pink center and red meat juice flowing out.
