Crush the walnuts in a sealed bag.
In a bowl, mix the crushed walnuts, black sesame powder, granulated sugar, and flour together.

In warm water (242g), add yeast (5g), granulated sugar (10g), and baking soda (1g). Mix well. Add flour (500g) and knead into a smooth dough (knead by hand for more than 100 times).
Let the dough rise until it doubles in size. (In cold weather, put it in a steamer at around 50 degrees Celsius to ferment.)
