Steps for making Walnut Raisin Chocolate Bread
Mix all the dough ingredients except butter in a stand mixer until the gluten is fully developed. Add butter and mix until the dough can be stretched into a thin film.
Add chopped walnuts and raisins and knead until well mixed.
Place the dough in the oven with a bowl of hot water and let it ferment.
Ferment until it doubles in size.
Divide the fermented dough into 5 pieces.
Take a small piece of dough and flatten it.
Shape it into a triangle.
Place it on a baking sheet and let it ferment until it doubles in size. You can sprinkle flour and cut patterns on it.
Bake in a preheated oven at 170 degrees Celsius for 20 minutes.
