Wash and cut the tomatoes.
Take out the shrimp and thaw.
Take 200g of flour and put it in a bowl.
Add a little cold water to the flour and stir with chopsticks.
Add more cold water as needed and stir until it becomes a thick paste.
Heat a little oil in a pot, sauté the scallions and ginger, add the tomatoes and a little cooking wine.
Prepare two eggs.
Add enough water, bring to a boil, and add the eggs.
After boiling again, slowly pour the batter into the pot along the edge with chopsticks.
Control the amount of batter poured in at once based on your preferred noodle size.
Once all the batter is poured in, wait for it to boil.
Add the shrimp.
Once it boils again and the shrimp is almost cooked, season with salt and pepper, stir, and then it’s ready to serve.
Serve in a bowl and you can add a little sesame oil for extra flavor!
