Steps for making Wonton Filling
Soak the dried shrimp in warm water in advance until soft, and reserve the water for later use. Then chop the dried shrimp and scallion into small pieces.
Chop the ginger into small pieces of uniform size;
Then add the chopped scallion, ginger, and dried shrimp to the ground pork filling,
Add salt, egg, sugar, and monosodium glutamate, and mix well;
Use chopsticks to beat the mixed meat filling in the same direction to make it more elastic;
Take a wonton wrapper and place it in the palm of your hand;
Place an appropriate amount of meat filling on one-third of the wonton wrapper and roll it up as shown in the picture;
Seal both ends;
Boil water in a pot, blanch the washed snow pea shoots for a few seconds, then remove them from the pot and drain them. At the same time, put vinegar, soy sauce, sugar, white pepper, cooked lard, and other seasonings in a bowl to make the sauce for the sweet and sour wontons;
After the water in the pot boils again, add the wontons;
Stir with a slotted spoon to prevent sticking to the bottom of the pot;
Keep the heat on medium, and after the soup boils, add about 100ml of cold water and continue to cook. Add cold water at least 2-3 times until the wonton wrappers become transparent and soft. Drain off excess water;
Pour the sweet and sour sauce over the wontons, and add chili oil according to your taste.
