While the glutinous rice is cooking, dice the meat, bamboo shoots, dried tofu, shiitake mushrooms, and preserved vegetables. Finely chop the green onions and garlic for later use.
Sauté the diced meat in hot oil until it changes color, then add the chopped green onions and garlic to stir-fry until fragrant.
Add dark soy sauce and oyster sauce, stir-fry, then add the diced ingredients and stew with a little water.
Mix flour with water to form a thin batter.
Heat a non-stick pan with a little oil, pour in the batter, spread it into a pancake, then crack the eggs on top and spread them out once the surface of the pancake is almost dry.
Cook until the pancake is dry, then flip it over.
Layer the cooked glutinous rice and diced ingredients on top of the pancake.
Cut into 4 pieces, then flip and fry for a while, sprinkle with chopped green onions before serving.
