Prepare the Noodle Ingredients
Mix the flour, water, and egg together in one direction until it forms a dough. Cover with plastic wrap and let it sit for 15 minutes.
Knead the dough again until it is smooth. Cover with plastic wrap and let it sit for another 15 minutes.

Grease the cutting board and the surface of the dough with oil.
Cut the dough into 5 pieces.
Stretch each piece of dough and coil it up. Cover with plastic wrap and let it sit for 10 minutes.
Take out the dough and stretch it into a finger-sized round noodle while rolling it between your palms.
Coil the noodles and place them in an oiled dish. Cover with plastic wrap and refrigerate until ready to use.
After refrigerating the noodles, prepare the vegetables and meat.
Heat up some oil in a wok and stir-fry the ginger and Sichuan pepper powder until fragrant. Add the onion and stir-fry until translucent.
Add the green pepper and tomatoes and stir-fry until soft.
Add the sliced lamb and stir-fry until it changes color. Add the star anise cinnamon powder and stir-fry for a few seconds.
Add the appropriate amount of boiling water and bring to a boil. Add salt, soy sauce, and black pepper powder and mix well.
When ready to eat, hold the noodles in your hand and shake them on the cutting board a few times to stretch them out. Boil the noodles until cooked and then rinse them in cold water.
