Detailed Steps to Make Yam and Pork Bone Soup
Ask the butcher to chop the pork bones into chunks, rinse them twice with clean water
Blanch the bone chunks in boiling water, remove and rinse off any blood residue with water, set aside
Cut half a stalk of green onions into sections, peel and slice 4-5 pieces of ginger, prepare about 5 slices of American ginseng (optional if not available)
Fill a pot with cold water, add the bone chunks, green onions, ginger, and American ginseng, bring to a boil over high heat, skim off any foam, then add cooking wine and a few drops of rice vinegar, reduce heat to medium-low (cover the pot) and simmer for 40 minutes
Meanwhile, prepare the yam. Peel and clean the yam, cut it into small pieces. You can soak them in lightly salted water to prevent oxidation
After simmering the bone soup for 40 minutes, add the yam and 3 tablespoons of salt, continue to simmer over medium-low heat for 20 minutes. Just before serving, add a dozen or so goji berries
Even without MSG or chicken essence, the soup tastes delicious. After having a big bowl, you’ll feel warm inside.
