Yang Zhi Gan Lu Cooking Steps
.Ingredient Preparation: Sago 40g, Mango 400g, Pomelo 1/4 piece, Coconut Milk 80g, Fresh Milk 20g, Rock Sugar 10g.
Bring water to a boil in a pot, add rinsed sago and cook for 15 minutes, stirring occasionally to prevent sticking. Remove from heat, cover, and let sit for another 5 minutes.
Strain the sago using a sieve, rinse under running water to remove excess starch, until the sago turns into transparent round grains. Drain and set aside.
Peel 1/4 of the pomelo, remove the flesh and gently crush it, set aside.
Peel and remove the core of the mango, dice half of the flesh into 1cm cubes.
Place the undiced mango flesh in a blender, add coconut milk and rock sugar, blend into a smooth mango coconut mixture, then strain to remove any particles.
Combine cooked sago, diced mango, pomelo flesh with the strained mango coconut mixture, mix well, and chill in the refrigerator for 30 minutes;
Before serving, top with a few pieces of pomelo flesh for decoration.
