Whisk egg yolks and sugar with an electric mixer until pale and creamy.
Whisk until it reaches this consistency!
Pour whipping cream into a saucepan and heat over low heat until bubbles form around the edges (do not boil).
Slowly pour the whisked egg yolk mixture into the saucepan, stir well, then pour back into the saucepan and cook until thickened, stirring constantly, until the mixture coats the back of a spoon like ice cream batter.
Once cooled, mix in the yogurt, stir well, freeze in the refrigerator for 40 minutes, then remove and whisk with an electric mixer until fluffy, and freeze again.
