Steps to make Youtiao
Mix flour, baking soda, and Youtiao ingredient together. Dissolve salt in two-thirds of the water, use it to knead the dough, and use the remaining one-third of the water to moisten your hands and knead the dough. Apply oil to the surface of the dough, wrap it with plastic wrap, and let it rest for 1-2 hours.
Apply oil to the cutting board and roll the dough into a long sheet.
Cut the sheet into equal strips, stack two strips together, and press down in the middle with a scraper.
You can also stack two strips together without pressing them down.
Heat the oil in a wok, stretch the dough strips slightly when bringing them close to the wok, and gently fry them until golden brown.
Remove from the wok when done.
