Yunnan Snack – Small Pot Rice Noodles Cooking Steps
Mix minced pork belly with ginger pieces, ground pepper, and salt. Peel and cut tomatoes into small pieces, finely chop salted vegetables, and soak rice noodles in hot water until soft.
Cut chives into sections, and finely chop small chili peppers and cilantro for later use.
In a clay pot, add an appropriate amount of water and bring to a boil. Add tomatoes, salted vegetables, and small chili peppers. After boiling for 5 minutes, add the minced pork belly, quickly stir with chopsticks to prevent forming meatballs. If the minced pork is lean, you can add a small amount of lard. Reduce heat and simmer for 10 minutes.
Add soaked rice noodles and cook until the water boils. Add chives, turn off the heat, season with salt, sprinkle with cilantro, and serve.
