Detailed Steps for Cooking Zha Jiang Mian – Shanghai Eight Treasure Sauce Noodles
Prepare the mixed vegetables (Eight Treasures): shredded cucumber skin, shredded cucumber flesh, shredded purple cabbage, shredded carrot; diced chicken, diced tofu, diced shiitake mushrooms, chopped wood ear mushrooms.
Sauté the diced chicken in a hot pan.
When the chicken is half cooked, add diced tofu, chopped wood ear mushrooms, and diced shiitake mushrooms. Stir-fry for a moment.
Add sweet bean sauce and stir-fry briefly. You can add doubanjiang (broad bean paste) or not.
Add water and simmer for about 10 minutes. Increase heat to reduce the sauce. If the color is too light, add a few drops of dark soy sauce for color. Taste for saltiness; if too bland, add salt or sugar as needed.
Cook spaghetti for 10 minutes, then turn off the heat and let it sit covered for another 8 minutes. Drain the noodles and plate them.
Enjoy your meal~
