Main dough:
High-gluten flour: 90g; Milk powder: 9g; Water: 60g; Salt: 3g; Egg: 18g; Sugar: 30g; Yeast: 2g.
Pre-fermented dough:
High-gluten flour: 210g; Yeast: 2g; Water: 132g.

Steps for making Zhongzhong Cardada Super Soft Toast
Mix the pre-fermented dough ingredients together (no need to knead until smooth, just mix until combined). Let it ferment at room temperature for 1 hour, then refrigerate in the fridge for 17 hours.
Tear the pre-fermented dough into small pieces and mix with the main dough ingredients and Cardada sauce until it reaches the extensible stage (able to stretch out a large piece of film). Add butter and knead until it reaches the complete stage (commonly known as the glove film).
Let it ferment in a warm place.
Let it ferment until it doubles in size, then press it down to release the gas, divide it into 3 equal parts, and let it relax for 15 minutes.
Take one of them and roll it into a rectangle, press down the bottom edge, and roll it up from top to bottom. Repeat for all three parts, then let it relax for another 10 minutes.
Take one of them and flatten it lengthwise, then roll it into a rectangle again.
Flip it over, press down the bottom edge, and roll it up from top to bottom.
Put it in a toast mold and let it ferment in a warm and humid place (you can put it in a microwave or oven with a cup of warm water).
Let it ferment until it is 80% full, brush with egg liquid, and bake in a preheated oven at 180 degrees for 35 minutes. Cover with tin foil in the middle.
Remove from the mold and cool on a wire rack. Store at room temperature in a sealed container.
The finished product is very soft and delicate.
